- 1 lb skirt steak (or other cheap cuts)
- 1 pint cherry tomatoes
- 4 oz goat cheese
- 1/2 cup walnuts
- Spring greens
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
Everybody has their “go-to” menu item when they go out to eat at specific restaurants. When I go to The Olive Garden it’s Raviolli de Portebello every time, hands down, without fail. My Mom’s go-to is Steak Salad from Moxie’s (a Canadian restaurant chain for my American readers.) My Mom loves her Moxie’s Steak Salad so much she created her own version of it, and I happened to be around to snap pictures of it.
This steak salad recipe is very much a recipe meant for summer, but I like eating salad all year round – screw your salad standards!
Steak Salad Recipe
Ingredients:
- 1 lb skirt steak
- 1 pint cherry tomatoes
- Spring greens
- 1/2 cup walnuts
- 4 oz goat cheese
Directions:
- Preheat grill or BBQ to 350-400 degrees
- Season steaks with salt and black pepper, grill until medium rare (130° -140°)
- On individual plates lay spring greens, goat cheese, sliced cherry tomatoes and chopped walnuts.
- Slice steak and place on top of salad
- Lightly drizzle homemade balsamic vinaigrette
Homemade Balsamic Vinaigrette:
Ingredients:
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
Directions:
- Combine olive oil and balsamic vinegar in jar, shake thoroughly and enjoy!
