- 2 medium bell peppers
- 1/2 cup rinsed quinoa
- 1 medium sweet potato
- 2 slices mozzarella cheese
Not only are these quinoa and sweet potato stuffed peppers cheap and delicious but they are also incredibly healthy. A great dinner any day of the week, these stuffed peppers are sure to fill you up and leave you feeling satisfied.
Quinoa is an amazing super seed. It is packed full of protein, it’s low calorie and it is a complex carbohydrate with a low glycemic index. Hello bikini body! Sweet potatoes are also super nutritious – full of Vitamins A and C and are a great source of antioxidants. Shove them both inside two bell peppers and I’d say you’ve got yourself quite the nutritious dinner!
Preheat your oven to 450 degrees. Poke your sweet potato a few times with a fork, bake for 25-30 minutes .
Rinse your quinoa and add to a pot over high heat with 1 cup of water. Boil for 10 minutes or until the quinoa has absorbed all of the water and fluff it with a fork.
Slice the tops off of your bell peppers and scoop out the seeds. I like to slice a thin layer of the bumpy bottoms of the pepper off so they up sit straight on my pan. Peel your sweet potato and mash it up with your quinoa, stuff half of your peppers and lay a slice of mozzarella cheese in the middle of each pepper. Fill with the remaining quinoa and sweet potato mixture and add another slice of cheese on top.
Bake for 15-20 minutes depending on the desired texture of your pepper. I prefer mine to not be completely mushy and hold up while cutting into them so I took them out at 15 minutes.
Keep in mind that you are the boss of your own peppers! Add in some mushrooms or ground chicken if you want to. Throw some spices in the mix! Jalapenos, if you’re daring! Today we kept it simple. Such a simple pairing but they go together SO well.
