I promise you guys I am going to start cooking with more than just poultry, I promise! For today’s super simple recipe however we’re using chicken breasts. Today I’m going to tell you how to make a super quick and easy Mexican dinner!
Ingredients
2 Boneless Skinless Chicken Breasts
2 cups frozen corn
1 jar salsa
Hot sauce (optional)
Directions
Fry your chicken breasts LOW and SLOW so they are easy to shred with a fork. You’ll want them look like pulled pork texture.
Once your chicken breasts are cooked through dump in a 16 oz jar of your favorite salsa, hot sauce and 2 cups of corn.
Reduce heat to low cover for 5-10 minutes while your corn cooks.
You could serve this by itself, over Mexican rice, inside taco shells, ect.
However we ate this inside our homemade taco bowls and dipped our chips into it!
