• 3 boneless skinless chicken breasts
  • 2 tbsp pesto
  • 1/4 cup soft goat cheese
  • 1 tomato
  • 1/4 cup sliced mushrooms
  • 1/4 cup artichoke hearts

I love making stuffed chicken because it looks like you put a lot of effort into it but really you just sliced a raw chicken breast open, stuff some cheese in there and close the chicken flap… or whatever you want to call it. So for this recipe I essentially took a bunch of ingredients out of the fridge, threw them in and around some chicken breasts and put it in the oven. And what do you know, it actually turned out!! (Sometimes, a lot of the time, it doesn’t turn out.)

 

 

Ingredients

3 boneless skinless chicken breasts
2 tbsp pesto
1/4 cup soft goat cheese
1 tomato
1/4 cup sliced mushrooms
1/4 cup artichoke hearts

Directions

  1. Preheat your oven to 425 degrees
  2. Slice raw chicken breasts almost completely in half down the middle and stuff with goat cheese
  3. Cover each chicken breast with pesto, diced tomatoes, sliced mushrooms and artichoke hearts
  4. Bake in the oven for 45 minutes or until chicken is fully cooked
  5. Serve!
