We’re taking kale to a whole new level with these kale chip nachos. Crunchy kale chips with a hint of heat and topped with ooey gooey melted cheddar cheese. Who said nachos can’t be healthy?

Kale is one of the healthiest vegetables on the planet, which is great considering it can easily be turned into a snack food everyone knows and loves – chips!

Choose Kale varieties that have leafy edges to obtain optimum crispiness. Thoroughly wash and dry kale leaves, remove stems. In a large bowl add 1 tbsp olive oil and chilli powder. Mix thoroughly, it’s easiest to get your kale fully coated if you use your fingers. Space kale out evenly on a baking sheet.

Bake kale leafy side down in a 350 degree oven for 10 minutes. Remove from oven, don’t worry if they aren’t fully crispy yet – they are going back in the oven! Turn Kale onto other side and add your toppings and cheese, return to oven for an additional 5 minutes or until cheese is melted.

I went with green peppers and jalapenos for my nachos, you can choose to top them with whatever your heart desires! Serve with salsa and/or sour cream for dipping.

These Kale Chip Nachos are surprisingly sturdy, I feared they would be weak and break apart. You’re best using a spoon to scoop salsa onto your kale chips instead of dipping them straight to prevent breaking.
