- 6 slices cinnamon raisin bread
- 2 eggs
- 3/4 cup milk
- 1/2 cup pecans
- 1/2 cup sliced strawberries
- Maple syrup for serving
There’s nothing better than Sunday brunch, especially when you’re eating it with the one you love most. In Mike and my case, it was actually Monday brunch because due to our work schedules our Monday’s = Sunday’s, but that doesn’t make a difference in how amazing brunch is. This French Toast Casserole Recipe is absolutely perfect for Sunday brunch! Or breakfast! Or anytime of day, really. Breakfast for dinner, anyone?
This French Toast Casserole Recipe is the first recipe I’ve made while following a “low fodmap” diet in hopes to help some of my tummy troubles. From now on you’ll be seeing a lot of recipes where I’ve used gluten free or “special” ingredients, but that does not mean the recipe requires them…in fact I’ll omit the “gluten free” bit from the ingredients list completely, but you may notice things looking a little different in the pictures and that’s just due to funky ingredients for my funky tummy.

French Toast Casserole Recipe
Ingredients
6 slices cinnamon raisin bread
2 eggs
3/4 cup milk
1/2 cup pecans
1/2 cup sliced strawberries
Maple syrup for serving
Directions
Preheat oven to 350 degrees.
In a mixing bowl, whisk eggs and milk together.
In a casserole dish, lay 3 slices of cinnamon raisin bread beside each other.
Pour half of egg mixture over bread along with 1/2 of your sliced strawberries and half of your pecans.
Repeat this with the next layer of bread.
Bake for 35-40 minutes.
Slice and serve with maple syrup!
