- 6-8 red potatoes
- 8 hard boiled eggs
- 6-8 green onions
- 1 1/2 cups mayonnaise
- 1 tbsp dijon mustard
- Salt and pepper
Believe it or not I actually thought potato salad was some complex dish that you needed a lot of time and effort to make, I was completely wrong. My beautiful Mother in law taught me her Easy Potato Salad Recipe and I just had to share it on the blog. Potato salad is the perfect summer side dish, or late night snack if you’re my fiance. Actually, anything is the perfect late night snack if you’re my fiance. He eats a lot of late night snacks. Anyways, here’s my Easy Potato Salad Recipe. Enjoy!
Easy Potato Salad Recipe
Ingredients
6-8 red potatoes
8 hard boiled eggs
6-8 green onions
1 1/2 cups mayonnaise
1 tbsp dijon mustard
Salt and pepper
Directions
- Peel and cut red potatoes into quarters
- Boil until fork tender, strain and set aside to cool
- Add eggs to cold water, bring to boil, remove from heat and let sit for 8-10 minutes. Run cold water over eggs,
- Peel cooled boiled eggs, add to potatoes and squish with a fork to mix in
- Chop green onions and add to potatoes and eggs
- Stir in approximately 1 1/2 cups of mayonnaise and 1 tbsp dijon mustard
- Add salt and pepper to taste
- Serve!
