These crispy baked chicken fingers are so CRUNCHY and so much better for you than fried fingers. It is possible to have a healthy chicken finger and I’m going to tell you how!
Preheat your oven to 375 degrees. Beat 2 eggs in a bowl. Mix your panko breadcrumbs and parmasean cheese in another bowl. Slice your chicken breasts into 1/2 inch strips. Follow standard breading procedure by dipping your strips first into the egg and then into the bread crumbs.
The key to ensure a crunchy crust is to lay down a thin layer of your panko breadcrumbs on the baking sheet before you place your chicken fingers on it! This way the crust will not get soggy.
Bake your chicken fingers for 15 minutes and then flip them over, baking for another 15 minutes. It’s always a good idea to break one in half to make sure they’re not pink in the middle.
