- 1/2 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 teaspoon salt
- 3 large bananas, mashed
- 3/4 cup white sugar
- 1 egg
- 1/3 cup butter, melted
- 1/2 cup chocolate chips
Everyone who knows me knows I absolutely do not bake – especially not chocolate chip banana muffins. However, this past week my son had three straight days of fussiness. I couldn’t put him down, even when I was holding him he was fussing or crying. So, when Friday came around and he finally FINALLY went down for a nap that wasn’t on me I thought to myself – “Self, what the hell do we do with all of this free time?” So, instead of sitting here staring at my baby sleep, I whipped up some chocolate chip banana muffins like the good housewife I am (ha!) All jokes aside these chocolate chip banana muffins were absolutely delicious and I will definitely be baking them again. My, my how times have changed.
Chocolate Chip Banana Muffins
Ingredients for Chocolate Chip Banana Muffins
1/2 cups all-purpose flour
1 1/2 tsp baking soda
1/2 teaspoon salt
3 large bananas, mashed
3/4 cup white sugar
1 egg
1/3 cup butter, melted
1/2 cup chocolate chips (or more)
Directions for Chocolate Chip Banana Muffins
- Preheat oven to 350 degrees
- In a large mixing bowl, mash 3 bananas (I used previously frozen bananas), egg and melted butter.
- Fold in flour, baking soda, salt, sugar and chocolate chips
- Scoop evenly into muffin tray
- Bake for 20-25 minutes
- Enjoy
I hope you all enjoy these chocolate chip banana muffins as much as I did, they really didn’t last long in my house. It’s Sunday now and I think I have 3 left. They definitely aren’t the healthiest things to have around but they’ve gotta be better than cookies, right? Maybe? Anyways who cares….
