- 3 boneless skinless chicken breasts
- 3 tbsp pesto
- 3 slices mozzarella
- 1/2 cup artichoke hearts
- 1/2 cup cherry tomatoes
- Salt and Pepper
Chicken breast has to be the healthiest lean meat choice there is, but eating chicken all the time can become extremely boring. My boyfriend recently joined a weight loss challenge at the gym and it seems like we have been eating nothing but chicken breast for the past month. Which is good, but also not good when you are a foodie and love trying different things. I came up with this chicken with pesto and artichoke dish about a year ago. This recipe has developed quite a bit over the past year, now including mozzarella and cherry tomatoes. The combination of flavours is incredible, and if you aren’t a fan of artichokes they can easily be omitted! I served my chicken with pesto and artichokes with grilled veggies, however it also pairs really well with brown rice! Ingredients for Chicken with Pesto and Artichokes
3 boneless skinless chicken breasts
3 tbsp pesto
3 slices mozzarella cheese
1/2 cup artichoke hearts
1/2 cup cherry tomatoes
Salt and Pepper
Directions for Chicken with Pesto and Artichokes
- Preheat oven to 350 degrees
- Season boneless skinless chicken breasts with salt and pepper
- Spread one tablespoon of premade pesto over each breast
- Lay one slice of mozzarella cheese on each breast
- Spread cherry tomatoes and artichoke hearts evenly over top of each chicken breast
- Bake for 35-40 minutes until chicken is done
- Enjoy!
