- 1 lb extra lean ground beef
- 1 500ml can diced tomatoes
- 1 500ml can white mushrooms
- 1 500ml can red kidney beans
- 1 medium/large yellow onion
- 4-5 tbsp chilli powder (or more)
This cheap and easy chili recipe will leave you extremely confused as to why you have so much delicious food in front of you and you paid less than 10 dollars. Chili is a great recipe for college student and bachelors because you can make a gigantic batch of it, throw it in the fridge and eat it over the course of 3-4 days (I believe in the power of leftovers.) Or you can take it one step further and FREEZE your chilli in individual containers, defrosting as needed.
*I’d also like to add that this is a very healthy recipe and I’m pretty proud of it. Ahem, moving forward.
Directions for my Cheap and Easy Chili Recipe:
Throw a pound of extra lean ground beef in a skillet over medium heat. (Please don’t get mad at me for suggesting extra lean ground beef, you don’t have to use it. Use cheaper beef if you want to but mine only cost $4.00!)
Once your meat is browned throw in one finely chopped yellow onion, one can of diced tomatoes – juice included, and your mushrooms and kidney beans. I suggest rinsing your kidney beans and mushrooms to get rid of some of the sodium.
Add in chilli powder. Lots of chilli powder. A crap ton of chili powder. Or less, if you’re a wuss.
Simmer this forever. If you don’t have forever, an hour will do. The longer it simmers the better it tastes – that’s the golden rule of any easy chili recipe and that’s why leftover chili is the best thing in the world.
Serve this cheap and easy chili recipe with some shredded cheddar cheese on top, some avocado slices or even some sour cream! Make a smaller batch and make some chili-dogs. You are the boss of your own chili my friends, enjoy it!
