• 2 medium beets
  • 4 oz goat cheese
  • 1 cup toasted walnuts
  • 1/4 cup extra virgin olive oil
  • 2 tbsp white vinegar
  • Baguette Bread

Isn’t she beautiful? I think so. When I saw this recipe for roasted beets with goat cheese and walnuts from Food Wishes on YouTube, I know there had to be a way to re-write his recipe to make it delicious yet affordable – so that’s what I did!

Directions

Rub 1-2 tbsp of olive oil over your beet skin to help prevent them from drying out while they roast in the oven. Bake them in a 350 degree oven for 45 minutes, they should be tender enough to poke with a fork, but not completely soft.

Now put your roasted beets in the fridge until they reach room temperature.
While my beets were cooling off in the fridge I toasted my walnuts.

Toast your walnuts in a frying pan over medium high heat, flip them often. As they flip you will notice bits of skin collecting on the edge of your skillet.

Wipe as much of this away as you can with a paper towel, it will help eliminate the bitter taste of the raw walnuts

When your walnuts are lightly browned you can store them away to use later.

When your beets are room temperature it’s time to peel them! Peeling them could not be easier after they’ve been roasted! I used a light brush of a butter knife and the skin came right off!

You’re more than welcome to use rubber gloves while you peel your beets, but that kind of takes the fun out of it! Don’t be afraid to get messy!

Coat a pan or baking dish with some extra virgin olive oil, 2 tbsp should be enough but you want to make sure every piece of beet you are going to chop up will be sitting in some oil.
Slice your beets into what I like to call 2 bite chunks and lay them in the oil

Take your 4 oz of goat cheese and drop blobs of it in the spaces between the beets.
I splurged and bought the expensive goat cheese, normally $7.00 for a 4 oz package but it was on sale for $3.99

Bake at 450 degrees for 15 minutes

When you pull this out of the oven the beets should REALLY be sizzling in that oil. That’s how you know you’ve done good.

Sprinkle your walnuts over your beets and cheese. You may not need a full cup of walnuts but let’s be honest, you ate half of them while you were waiting for your beets to get to room temperature anyways.
Take 2 tbsp of white vinegar and drizzle it evenly over your goods.
Take some of your beet tops and give them a chiffonade, spread them over the top of your beets, cheese and walnuts.

I toasted my baguette bread slices with butter on both sides over medium heat in the frying pan so they reached a light golden brown in color

I’m extremely proud of this recipe, it is perfect as an entire meal for 2 people or as a holiday side dish! It’s just perfect all together, the flavor combinations were amazing. A must try!
