Fall is here and with fall comes many things to eat, like pumpkin spice lattes and apple crisp. However if you’re watching what you eat and you still want a treat (I’m a poet and I didn’t even know it – Mom taught me that one) these healthy crock pot baked apples are just the thing for you.
It’s kind of a free for all when it comes to baked apples. Whatever you like, throw it in. Want some raisins in your apple? Cool. I didn’t have raisins so that didn’t happen, but you get the idea. Here’s how I made my apples, and they were amazing.
Ingredients
2 Granny Smith Apples (Use Granny Smith if you like tartness, use anything else if you don’t.)
1/4 cup rolled oats (I used quick cooking)
2 tbsp brown suger
1 tbsp butter or margarine
1 tsp of cinnamon
Please for the love of Autumn remember that these ingredients are just a base, work with what you like. More cinnamon, less brown sugar, add raisins – whatever your heart desires. p.s I ate both these apples, I just made them for myself. And guess what? Nick (after telling me he didn’t want any 15 times, wanted a bite, then said it was amazing, and then had me make them AGAIN the next night!)
Core your apples as best you can. I did this with a butter knife and a spoon so don’t tell me it’s too hard.
Melt your butter and mix it together with your oats, brown sugar and cinnamon.
Pour about half an inch of water (or apple juice if you think that will make it taste better) in the bottom of your crock pot.
Stuff your apples and set them in the bottom of your crock pot.
Cover and set on high for 3-4 hours or until your apples are at your desired consistency. I like mine mushy.
You could top this with ice cream or frozen yogurt but I just ate these as is and they were so good! Definitely give it a try. Please don’t forget to share this post with your friends! Thank you!
