- 1 large ripe avocado
- 2 eggs
- 2 tsp vanilla
- 1-3 tbsp water
- 1x 100g bar of dark chocolate
- 1/4-1/2 cup dark chocolate chips
- 1 cup cocoa powder
- 1/2 cup sugar
- 1/2 tsp baking soda
- Pinch of salt
At 9:30 PM on Oscar Sunday, Mike and I were hanging out on the couch. He was reading his book and I was casually scrolling down Pinterest. (by the way, have you followed me on Pinterest yet?!) I stumbled across this amazing looking gluten free brownie recipe by the lovely Kristy at southerninlaw.com and I had to give it a try – so we went grocery shopping at 10 PM on a Sunday night, which is a very interesting experience in itself.
What makes these gluten free brownies so special is not only that they are gluten free, it’s that they contain an entire avocado! What?! Don’t worry though, you can’t taste the avocado, it just helps give these gluten free fudgy brownies their fudgy-ness.
Gluten Free Fudgy Brownies
Ingredients
1 large ripe avocado
2 eggs
2 tsp vanilla
1-3 tbsp water
1x 100g bar of dark chocolate
1/4-1/2 cup dark chocolate chips
1 cup cocoa powder
1/2 cup sugar
1/2 tsp baking soda
Pinch of salt
Directions
Preheat oven to 350 degrees.
In a blender/food processor puree avocado with 1 tbsp water.
Melt dark chocolate bar and combine with avocado.
Transfer avocado/chocolate mix into a large mixing bowl. Slowly stir in cocoa powder, salt, sugar and baking soda.
Add in eggs one at a time, if mixture is too thick add in 1-2 tbsp water.
Spread brownie mix evenly into a greased brownie pan.
Top with chocolate chips. Bake for 20-25 minutes until toothpick comes out clean.
Serve chilled and enjoy!
One of these gluten free fudgy brownies only rings in at 160 calories and costs around .35 cents! At that rate you can afford to eat two in one sitting. Or three. I won’t judge.
